Ingredients for 20 cookies:
- 160 grams flour
- 80 grams CBD butter (about 25 grams CBD flowers)
- 50 grams brown sugar
- 100 grams dark chocolate (70% cocoa)
- 50 grams almonds
- 1 egg
- 1 pinch salt
- ½ sachet yeast

- A large salad bowl
- Parchment paper
- A rolling pin

- A kitchen thermometer (for butter)

Step 1: Making your own CBD butter?
If you've already made your own CBD butter, you can skip this step. Quantities are given here to match our CBD cookie recipe, but we advise you to make a whole butter for future preparations. CBD butter keeps well in the freezer.

We strongly recommend that you grind your CBD flowers in a mortar and pestle into small pieces, rather than powdering them, to better preserve aroma, texture and color.
- CBD butter infusion
Then simmer your CBD flowers in the butter of your choice.The mixture should be simmering, not boiling, and you should measure the temperature regularly with a kitchen thermometer to prevent the mixture burning at the bottom.You should keep your infusion at this temperature for around 3 hours.
You'll need to remain vigilant, regularly basting your butter with a little water, stirring occasionally with a wooden spatula (be careful not to drown it either).Repeat this operation as soon as the water has evaporated, just as you would with risotto.The butter is ready when an oil floats above the compact part.
- Filtering
Once these three hours have elapsed, comes the crucial step of filtering.The infused solution should be drained off using a strainer.Don't forget to place a container underneath and let it drain naturally without pressing, as this could damage your butter.You can use the remaining oil for seasoning.The flowers can be discarded.Leave to cool for half an hour at room temperature, then refrigerate for at least 24 hours before using.
Step 2: Make your own cookie dough
Crush your almonds and chocolate (to obtain nuggets).
Add the egg to your bowl with the sugar, then beat with your whisk, adding your flour as you go to avoid lumps. Continue beating until you have a smooth dough.
Add the remaining ingredients and mix by hand. The butter should be soft (i.e. left at room temperature). Once finished, cover the bowl and leave to cool in the fridge for around ten minutes.
Then shape your cookies by hand, dividing the paw into 20 portions (or 10-15 for larger cookies) to make small balls of similar size.
Step 3: Cooking
Line the baking sheet with baking parchment. Using your rolling pin, very lightly flattenthesmall balls of cookie dough you've just made.Heat your oven to 140°, then bake your cookies for 15 to 20 minutes. A higher baking temperature will result in a crispier cookie, but this may alter the quality of the CBD, which doesn't like high heat.
Let cool, then enjoy!
